Piña Colada Ginger Smoothie
This smoothie is a favorite at our house during the summer! It tastes like a tropical vacation with a little extra kick from the ginger.
It's also great for immunity or soothing a sore throat as the citrus and camu camu are high in Vitamin C.
Costco has very affordable organic frozen produce that is great for smoothies.
You can find both the pineapple and mango for this recipe there as well as the Thai Kitchen coconut milk.
As with most of my recipes, feel free to omit what you don't like or don't have on hand!
PIÑA COLADA GINGER SMOOTHIE
1 can coconut milk (Thai Kitchen is my favorite)
1 orange, peeled
1 lime, peeled
1 cup frozen pineapple
1/2 cup frozen mango
1 frozen banana
1-3 tbsp fresh ginger, peeled and chopped
(this is spicy so add according to your taste!)
1 scoop Collagen peptides (plain or vanilla)
1 tsp Camu camu powder
(optional; I purchase mine from Thrive Market or Vitacost)
1 cup ice
Blend all ingredients except ice in blender until smooth.
Add ice and blend again.
This makes enough for 2 large servings or 4+ smaller servings.
